Spiced Candied Nuts

Spiced candied nuts for the holidays.
This is not and exact science....
What you will need.....
1 cup watter
1 cup white sugar
1 cup brown sugar
Cinnamon
Nutmeg
Clove
Allspice
Vanilla (
if you like but not in the original recipe but I find it adds a nice flavor)
3 cups whole nuts (
any verity ...walnuts, pecans, almonds is what my grandma used) (
or just your favorite kind... I use only Pecans)
Add watter and sugars to large skillet.
add your spices to taste
now I have never measured these out....
I just go off smell really, when it starts to smell good, almost like a pumpkin pie.
the cinnamon I put in first and it kind of floats on the watter so I just put a layer of cinnamon over the whole pan, a few pinches nutmeg (to much can get bitter), just a small dash of clove (a little goes a long way), a few dashes of allspice, a cap full of vanilla.
Stir it all up and crank the heat on and stir till all the sugar is dissolved. Add your nuts of choice and mix mix mix ..... it will start to thicken and bubble keep stirring to make sure all the nuts are covered in the yummy goodness.... it will get thicker and thicker and just when you want to give up on stirring the magic will start to happen.... the sugar will start to re cristalise. When the whole pan is done dump on a cookie sheet to cool and enjoy.
It takes about 20 minutes from start to finish.
***I use fresh pecans so it takes longer cause of the moistness in a fresh nut.
**you can add more than 3 cups of nuts if it looks like they will fit.
