This is my favorite "easy meal" to prepare when I haven't alot of time. It just uses your basic store bought pie crusts, and is very healthy and satisfying to your belly. =)
Tuna Pot Pie
1 pkg store bought pie crust
2 cans tuna (any type, I prefer albacore)
1 can cream of mushroom soup (I use low salt)
1 can of sliced potatoes
2 cans of veggies (I prefer peas, carrots)
Preheat oven at 350*, In a large bowl mix the tuna, veggies, and soup together. Fix the pie crust as you like, I just make it like a normal "pie". Spread the tuna mixture into the bottom pie crust, top it with the second pie crust. Take your fork or knife and poke holes into the top pie crust for venting, crease the crust edges with your fork. Cook for about 20 minutes (checking the crust) when the crust turns golden brown after 30 minutes it is done. To prevent burnt crust, either use a tin foil to cover or a special tin made especially for that. Enjoy!!!
