quick and easy sweet bread for the holidays
this is really a great sweet bread cheat. my sister and I wrote it last fall.
1 -cake mix. any but chocolate, spice works well
1 -can sweetened condenced milk
1/3- cup veg oil (Olive oil is too heavy)
2 -whole eggs
1 -small can pumpkin
1 -tesp, cinn
1 -crushed clove or a heavy pinch allspice
1/4th- cup brown sugar
(the toss ins) this is totaly up to you. the bread is heavy and wet enuff to handle about anything you put in.
I use
1- handfull any nut, I like pecans, she likes wallnuts, any will do
1- handfull raisins or dried fruit, like appricots. cherrys and cranberrys work well too.
pour into a well greased loaf pan 3/4 full. depending on the consistancy you could get 2 of these, bake at 375 for the first 15 min and lower the temp to 350, as it has pumpkin in its going to be very wet and moist, it will take a bit longer to set, check it every 20 min until it springs back when lightly touched in the center,
let it set for 15 min before you try and invert it to cut.
serve with soft cream cheese mixed with 2 big tbl spoons of
apple butter, and a pinch of cinn. cream and let come to spreadable temp. or any ready made soft fruit flavored cream cheese
hope ya like it :)
