Christmas Cheesecake

My Mom would make this every year for Christmas, the whole family would love it!!!
Pastry
1 cup flour
1 teaspoon grated lemon rind
1 1/4 cup margarine
1/4 cup sugar
1/2 teaspoon vanilla
1 egg yolk
Cheese Filling
2 1/2 lbs. cream cheese
3 tablespoons flour
5 eggs
1/4 cup heavy cream
1/4 teaspoon vanilla
1 3/4 cup sugar
1 1/2 teaspoon grated orange rind
1 1/2 teaspoon grated lemon rind
2 egg yolks
Pastry
1. Mix above pastry ingredients together, mix well
2. Refrigerate (makes it easier to work with later)
3. After it has been chilled for about 1 hour, roll 1/4 of the pastry onto a oiled bottom of a spring form pan.
4. Bake at 400f degrees until browned, about 10 minutes, make sure you watch this burns really fast.
5. Roll remainder of pastry onto the sides of the pan
6. Assemble pan, cover all cracks with dough so no filling will leak out.
Filling:
1. Mix cream cheese, sugar, flour, orange and lemon rind, eggs, vanilla, egg yolks and heavy cream. blend well
2. Pour mixture in the spring pan
Bake 10 minutes at 550f degrees, then reduce heat to 200f degrees for 1 hour. Turn oven off and leave in oven until cool. Serve cold
