Blueberry Peach Crisp: picture included
FRUIT:
4 cups sliced peeled fresh or frozen (thawed) peaches
2 tsps lemon juice
3 cups fresh or frozen (thawed) blueberries
3 Tblsp flour
3 to 4 Tblsp sugar
TOPPING:
1/4 cup firmly packed brown sugar
1/4 cup quick-cooking rolled oats
2 Tblsp flour
2 Tblsp chopped almonds
1/2 tsp cinnamon
1/8 tsp nutmeg
2 Tblsp margarine
Heat oven to 350. In 8-inch square (1 1/2 qt) baking dish, combine peaches and lemon jice; toss gently. Stir in blueberies, 3 Tblsp flour and sugar; toss with peaches.
In small bowl, combine all topping ingredients, except margarine. With fork or pastry blender, cut in margarine until crumbly. Sprinkle topping over fruit.
Bake at 350 for 30 minutes, or until golden brown and bubbly. If desired, serve with light frozen whipped topping, thawed, or frozen yogurt.
MICROWAVE DIRECTIONS:
Using 8-in square ( 1 1/2 qt) microwave-safe dish, prepare recipe as directed. Microwave on HIGH for 11 to 15 minutes or until fruit is tender, rotating dish 1/4 turn once during cooking.
